If you are looking for some light salad recipes but you want them to be fulfilling at the same time, an avocado salad recipe might be the right thing for you. Now, I have to be clear about this. Avacodos are not precisely low in calorie but they are filled with vitamin E. Vitamin E gives you a nice clear complexion. Also, there are lots of fiber in avocados. Now let's start with the recipe, shall we? Firstly, tear the hearts of Romaine into small pieces and put in a handful of mesclun mix and diced Spanish onion. Mix them well. Put in some croutons in the center of the plate and sprinkle the salad with some black or ground pepper. If you like, you can also add a sliced radish to the plate. After that, add some fresh mozzarella, around the edge of the plate.
Now for the main ingredients. Firstly, cut the tomatoes and avocados into wedges. Dip the avocado wedges in lemon juice to prevent discoloration. Alternate the tomato and avocado wedges around the perimeter of the plate. You can also put in some black olives throughout the salad and a hard-boiled egg for some protein. As for the dressing, you might want to use thousand island because it goes well with the salad.
